Crafted in Ireland on the farm of Jane and Louis Grubb, their daughter Sarah Furno is the brain behind Cashel Blue. A whole cow's milk cheese, Cashel Blue is firm, creamy-edged, and full of character. Balancing salty, creamy and blue-y, Cashel Blue is a staple of any cheese board and pairs beautifully with a craft beer (stout or ipa), a lightly smoky/peaty scotch or any digestif cocktail/spirit.
