The Manchego was named in reference to the arid plateau of La Mancha, between Madrid and Toledo. Baptized Al Mansha (land without water) by the Arabs, it is a vast flat region with a few trees desiccated by temperatures that can reach 50°C and very low rainfall. It's a beautiful, timeless corner of Spain dotted with old ruins. The meager harvest of a few liters of milk per day per animal is indisputably rich since it is impregnated with the essence of wild thyme, aromatic herbs and dried acorns which make up their diet. The texture is dry while being creamy. It is usually slightly oily on the surface and feels greasy once in the mouth, but that only enhances its taste. FLAVOUR: The complexity of its flavor is greatly influenced by its aging, but all Manchego have a characteristic richness reminiscent of Brazil nuts and caramel, with an aroma of lanolin and a slightly salty finish. HOW TO TASTE IT: To be enjoyed on a tray or in the kitchen. It is extremely versatile and imparts a nutty sweetness to dishes when cooked. It goes well with a robust red or if the cheese is young accompanied by a fresh white.
