Maroilles AOP Ducornet - (150g - 175g)
Maroilles Ducornet is made in the North of France. AOP (Appellation d'Origine Protégée) since 1976. It was created by monks around 962 because they decided to age the cheese longer than usual. It is produce by the dairy Leduc, a small family business who makes cheese since 3 generations. They make their cheese in a traditional way and following the monks methods. Made from pasteurized cow's milk, it is a washed rind cheese. During ripening, the cheese is regularly turned over and rinsed in a brine bath, then brushed. The refining of this cheese lasts on average 4 months. The crust changes from yellow to orange, then to red. You will find an ivory supple paste. FLAVOUR: Its taste is complex, persistent with a lot of character
HOW TO SAVOUR: Maroilles Ducornet always find its place on cheeseboard. It can be enjoyed with all types of strong and vigorous red wines and it pairs well with abbaye beers because of the origins of the cheese.
