Miyabi Kaizen 9.5 Inch Bread Knife
The Miyabi Kaizen 9.5 Inch Bread knife features a Damascus ice-hardened blade which is hand finished with the traditional 3-step Honbazuke Method. The result is a blade with a Rockwell hardness of 60 that has outstanding cutting edge retention and resists corrosion.
Miyabi continues to strive for perfection with the introduction of MIYABI Kaizen - Japanese for "Improvement" or "Change for the better". This is the next generation of MIYABI knives, made in Seki, Japan, and combines the greatest hardening technology with the artistry of traditional craftsmanship.
