
Torta de Dehesa - Pasteurized Cow Milk Cheese
A pioneer in Spain in natural and organic farming, Hacienda Zorita produces limited quantities of high quality raw milk cheeses in its organic farm in the Duero Valley. The farm is home to Verata goats, natural pasture and wheat fields which are protected natural land where cattle are allowed to graze freely. A wide range of animals live together in harmony on this farm and contribute to the production of their high quality cheeses. Its natural rind is thin and brittle, yellow, olive green and ocher in color. FLAVORS: The paste is unctuous and melts in the mouth. Its taste is tangy, slightly spicy, and releases an explosion of herbaceous flavors. The flavor is balanced and intense, sweet, lactic, with sweet cereal notes. It has an elegant and pronounced aftertaste. There is also a slight bitterness produced by vegetable rennet.
HOW TO TASTE IT: Open it up and serve it in the center of the table with a warm loaf with a crispy crust. Also ideal for a gratin. Accompany it with a dry white wine, or a Crianza or Reserva red wine, elegant and velvety.
