The inventive brothers Alonso, Tomás and Javier produce this blue cheese in the province of León, in the Picos de Europa, where the climate of Valdeón is less humid than that of Picón. The mold that blossoms produces a less intense flavor than other similar blues. La Valdeón is often sold under the name Picos de Europa.
The crust is wrapped in sycamore leaves.
FLAVOR: Spicy without being strong and fragrant with a touch of salt, it leaves an elegant aftertaste.
HOW TO TASTE IT: Enjoy it with hazelnuts, walnuts, prunes and port or cider. It is also excellent in sauce.
