Are all the cheeses on the website?
No. Our website features all of our regular, year-round cheeses, but we also carry a selection of seasonal and specialty cheeses available exclusively in-store. These unique offerings often come in small quantities and depend on availability from our local and international suppliers.
Where do you source your cheese from?
We proudly source our cheeses from both local Canadian artisans and renowned international producers. Our selection includes cheeses from Québec, Ontario, and Atlantic Canada, as well as exceptional varieties from countries such as France, Italy, Spain, Switzerland, England, Ireland, and the Netherlands. We are always searching for new and exciting cheeses to bring the very best selection to our customers.
whats the difference between pasteurized, thermized and raw milk?
Pasteurized milk is heated before cheesemaking to eliminate harmful bacteria, resulting in a consistent and safe product. Raw milk cheese is made from unpasteurized milk and can develop more complex, nuanced flavours that reflect the animals' diet and the local environment. Offering a middle ground, thermized milk is gently heated to a lower temperature than pasteurization, which reduces spoilage bacteria while preserving many of the natural enzymes and microbes that contribute to a cheese's unique character. Because neither raw nor thermized milk undergoes full pasteurization, Canadian regulations require cheeses made from both milk types to be aged for a minimum of 60 days before they can be sold. Ultimately, all three styles produce exceptional cheeses, each with its own unique characteristics.
Do you carry lactose-free cheese?
Yes! We carry a selection of naturally lactose-free cheeses. Many aged cheeses contain little to no lactose because it is broken down during the cheesemaking and aging process. If you have lactose intolerance or specific dietary needs, our staff will be happy to recommend cheeses that are suitable for you.
is there a time restriction on ordering cheese boards?
Yes. We kindly ask for at least 24 hour notice for all cheese board orders. This allows us time to prepare your board with the freshest products available. When you place your order, we'll also ask about any dietary restrictions, allergies, preferences, or special requests so we can create a board tailored to your occasion.
