A cold-smoked blue cheese that begins its life as a traditional cow’s milk wheel crafted by Benedictine monks at the Abbaye de Saint-Benoît-du-Lac before being naturally smoked over hickory woodchips. It features a visually striking, deeply tanned exterior that locks in a dense, cream-colored paste shot through with deep blue pockets. The flavour has a bold, campfire-smokey punch that smoothly gives way to a fudgy, buttery interior brimming with a salty-sweet blue tang and a toasted-nut finish.
