A legendary, unpasteurized sheep's milk blue cheese aged entirely in the natural Combalou caves of Roquefort-sur-Soulzon. Maison Carles is one of the last producers to cultivate its Penicillium roqueforti mold on whole loaves of rye bread. Powerfully pungent, complex, and moist. It hits with a sharp, salty, metallic, and peppery blue punch that balances beautifully against the sweet, ultra-rich sheep's milk.
