A smooth, dense cow's milk cheese whose name literally translates to "cellar sitter" because it is washed and aged for at least 10 months. Intensely savoury and deeply complex. Expect flavours of melted butter, roasted nuts, brown onions, and a sweet, caramel finish with a tiny hint of funk.
