A bold blue cheese made from a blend of cow and goat's milk. It is instantly recognizable because it comes wrapped in giant sycamore leaves. Intensely pungent, spicy, and earthy. The goat's milk gives it a sharp tang, while the leaf wrapping imparts an earthy, complex, slightly vegetal woodiness to the spicy blue veins.
