Sharp, lemon-like and peppery that leaves a tingle in the mouth. Particularly good with chicken and roasted meats. Commonly used in Chinese cuisine of China's southwestern Sichuan Province.
Add to stir-fried vegetables or gently toast and crush before mixing with ginger, garlic and soy as marinade for tuna steaks.
