Bercail - (150g - 175g)

The Bercail has a dark beige rind and a whitish, supple and creamy paste. It has floral and vegetal aromas. Its flavors are rich, lactic, finely nutty and salty.

Lightly matured, this cheese is fresh and very soft in the mouth. With maturation, the rind becomes firmer and its taste, more full-bodied.
