The production of Cantal is based on a unique know-how in the respect of tradition, according to a production process respecting all the criteria necessary to obtain the protected designation of origin (AOP). Benefiting from an AOP since 1956, Cantal is one of the oldest cheeses in Auvergne. It is the only French cheese made using the cheddarisation process, typical of many traditional English pressed cheeses. The cooperative has several ripening cellars, including the incredible Saint-Ponçy cellar built in a former 220 m long railway tunnel that can accommodate 2,500 40 kg Cantal cheese wheels. Wine merchants turn and rub each cheese twice a week. It has a firm paste of ivory to dark yellow color, supple for the youngest cheeses and slightly crumbly for the more mature ones. FLAVORS Cantal Haut Herbage is a unique cheese that is both firm and melts in the mouth. It is also very rich in the diversity of its tastes linked to its ripening. Its taste is intense, frank and persistent. HOW TO TASTE Cantal goes well with a light, fruity wine, such as a Côtes d'Auvergne, Côtes Roannaises or Beaujolais.
