Annatto seeds are very hard and very coloring. Generally, it is grinded for a long time to obtain a very fine powder, which is then incorporated with other spices to make pastes or marinades. It is also common to heat the seeds in vegetable oil until it is colored; the grains are then thrown away and the oil is used for cooking dishes which are infused with the delicate flavor and the beautiful color of annatto. It is then used in rice, fish, poultry or pork dishes.
