Along with its subtle taste, this cheese is covered in a blooming thyme rind, presenting a mixture of different colors and enclosing a firm, tender, ivory-coloured cheese mottled with thyme. It is ripened for 1 month in cellars where it is turned to develop this unique taste. This honey goat cheese is perfect for a goat cheese salad with nuts, red grapes and apple vinaigrette.
