A specialty of Sevilla, tortas de aceite are feather-light, crisp wafers made with olive oil instead of a solid shortening. These are simply flavored with a bit of sea salt, making them a good platform for cheese and tapenades. Or serve alongside a bowl of soup in place of the expected bread.
