The garlic comes direct from family farms in nearby Gilroy, California, America’s garlic capital. Because of our longstanding relationships with these local farmers, our garlic is delivered to our door within hours of harvesting. For the olives, we use large Spanish-style olives, prized for their firm texture and buttery taste, imported from the sun-drenched Mediterranean. Jeff Mezzetta and our Italy-based import manager travel to Europe each season to personally inspect the crops, ensuring that you get only the finest quality olives our growers have to offer. Once the ingredients reach our production facility in Napa Valley, California, each olive is painstakingly hand stuffed with a clove of fresh garlic, resulting in a crisp savory olive that is as a
