This artisanal whole milk blue cheese is made in the mountains. The mountain's lush green slopes grow wild flowers and thick grass which give the ewe's milk its complexity, its finesse and its texture. The Bleu de Basques is ripened for a minimum of 3 months. This gives the paste its soft, lightly blue-veined interior. It has a naturally dry grey rind and its paste is cream-colored and marbled with grey-blue Penicillium. FLAVOUR: This blue with a pronounced flavor presents a nice balance between the slightly bitter flavors of the penicillium Roquefort and the notes of lanolin from the ewe's milk. HOW TO SAVOUR : Serve it for dessert accompanied with scones or dried figs.
