In the 9th century, Fourme d'Ambert AOP was nicknamed "The Great Lady with a Tender Heart." This was undoubtedly due to its delicate taste, which is more about aroma than strength. Finally, it has a supple, rounded texture that begs to be savored.
At the time, Fourme was sold primarily at the market in the small town of Ambert, which later gave it its name. It obtained its Label in 1940 and its AOC in 1972.
