San Simon de Costa PDO - (150g - 175g)

The San Simon de Costa is a bouncy, buttery, semi firm cheese with a smoky flavor. The cheeses are smoked over green Abedul birch wood from trees on the maker’s property. This gives the cheese a wonderful golden orange color, a wood fire aroma and a smoky taste.
