There are also 100 layers of our premium steel and an FC 63 core in the ultra-sharp, 14 cm long blade, with very lean Honbazuke honing created by master craftsmen in Japan to allow extremely precise cutting at the chopping board or during paring work. The Japanese Compact chef's knife has an excellent hardness of 63 HRC. The blade is rounded off by its graceful look with a damask pattern and exquisite Micarta handle.
